As a new mom and someone who isn’t a fan of cooking, I need to make dishes that are easily eaten with one hand. It’s a given that every new mom only has one free hand. The other is usually holding a baby or deterring a baby from crawling and eating dirt.
When Lindsay posted her Homemade Paleo Protein Bar, it look super easy to make. They’re full of protein, which I need because I’m still a milk-making machine. I made these in minutes!

I made some edits because I didn’t have cacao nibs or walnuts on-hand.
- 1/3 cup raw almonds
- 1/3 cup raw cashews
- 1/3 cup dried apricots
- 1/2 cup medjool dates
- 1/3 cup mini chocolate chips (is it still paleo if I used semisweet chips? hah!)
- 1/4 cup of shredded coconut
I don’t have a food processor but I do have my Vitamix! I pulsed the crap out of the ingredients, but then I couldn’t figure out how to make them into “bars.” When I hand-molded them, my bars looked like turds. Or pathetic-looking Almond Roca bars. (That’s being nice.)
I took my turds and put them in the mold and smashed them with the top. Voila!! Bars!!
My “recipe” yielded four brick-sized bars of yumminess. I put them in the fridge overnight and they firmed up well. This is not a low-calorie snack. It’s high in fat and protein. PERFECT!
As a person who needs to eat quickly and fill up on protein over carbs, this was a success! I can’t wait to ziploc them and take them on the go! I’ll be making more of these snackers in a couple days. I’m going to try adding oatmeal and ground flaxmeal to the recipe and see how it goes.
